A steak tartar a la turca is a food prepared with mixing bulgur, isot, ground meat, paste, onion, parsley and various spices, consumed without cooking and particular to Şanlıurfa city.

Other than Şanlıurfa, the steak tartar a la turca was made in Adana, Adıyaman, Gaziantep, Diyarbakır, Mardin, Elazığ, Malatya. Generally, it is served with thin and long pieces with lettuce leaves. It can be consumed with thin bread in some regions of Şanlıurfa.

A steak a la turca is a food required to consume in fresh without waiting because of swelling feature of bulgur. The steak a la turca without any meat is also started to produce because of various disease especially teniasis, occurred because of raw meat.
